02 - Add pitted dates, honey or maple syrup, vanilla extract, and salt to the processor. Blend until mixture binds together when pressed between fingers. Adjust consistency with 1-2 teaspoons water if needed.
03 - Scoop tablespoon portions of dough and roll into smooth balls using clean hands. Work quickly to prevent warming the mixture.
04 - Roll each ball in mini chocolate chips, shredded coconut, or chopped nuts for added texture and visual appeal.
05 - Refrigerate bites for at least 15 minutes to firm up before serving. Best enjoyed chilled.
