01 - Prepare a brain-shaped mold or line a medium bowl with plastic wrap to create the brain form structure.
02 - In a large saucepan over medium heat, melt the butter. Add the mini marshmallows and stir continuously until completely melted and smooth.
03 - Tint the marshmallow mixture with a few drops of red or pink food coloring, stirring thoroughly until a consistent brain-like hue is achieved.
04 - Remove from heat and fold in the crispy rice cereal, mixing until evenly coated. Allow the mixture to cool slightly until safe to handle.
05 - Using buttered hands to prevent sticking, press half the cereal mixture into the prepared mold, pressing up along the sides to create a hollow cavity in the center.
06 - Spoon the raspberry or strawberry jam and coulis into the central cavity, keeping it centered and away from the edges.
07 - Gently cover the filling with the remaining cereal mixture, pressing firmly to seal the filling inside. Shape the exterior to enhance the characteristic brain appearance with ridges and folds.
08 - Let the structure set at room temperature for 20–30 minutes until firm. Carefully unmold onto a serving plate.
09 - Optionally use additional food coloring and a small brush to accentuate the brain cell ridges and convolutions. Add candy eyes or sprinkles for extra spooky presentation.
10 - Slice the brain to reveal the oozing berry filling and serve immediately for maximum visual effect.
