01 - Bring a large pot of salted water to boil. Cook fettuccine until al dente according to package directions. Reserve 1/2 cup pasta water before draining.
02 - Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and salt. Cook 10 minutes, stirring occasionally, until onions soften and begin to brown.
03 - Sprinkle brown sugar over onions. Continue cooking 15-20 minutes, stirring frequently, until onions reach deep golden color and rich caramelized consistency.
04 - Add minced garlic and chopped red chili to caramelized onions. Sauté 1-2 minutes until fragrant, being careful not to burn garlic.
05 - Pour in heavy cream. Add honey, grated Parmesan, red pepper flakes, and black pepper. Simmer gently 2-3 minutes until sauce thickens slightly and cheese melts.
06 - Add cooked fettuccine to skillet. Toss thoroughly to coat noodles. Add reserved pasta water one tablespoon at a time until sauce achieves desired consistency.
07 - Taste and adjust seasoning with salt and pepper as needed. Serve immediately, topped with fresh parsley and additional grated Parmesan.
